Community Supported Agriculture (CSA) is a great way to buy local. CSA's bring fresh food directly from a farm or a group of farms in your area to you. Typically, you sign up for a season, which can very in length, and each week during that season you will get a box filled with fresh vegetables, fruits, herbs and sometimes eggs and cheeses. The content of the boxes depend on availability each week. Most CSA's have multiple pick-up locations, so that it is convenient for you to participate. We are in our second year with Penn's Corner CSA; their website has some good information about CSA.
I am putting the recipes and ideas related to items we receive from our CSA on this separate page because I have a feeling we may end up with some bizarre stuff and that sort of contradicts my whole simple, basic, casual ingredients theme. I hope you will find some motivation here to try something new and maybe even check out a CSA like Penn's Corner in your neck of the woods.

1 lb. black seeded Simpson lettuce, washed, dried and chopped to bite size
1 1/2 tbsp. unsalted butter
2 tbsp. extra virgin olive oil
1/4 c. green onions, chopped
2 tbsp. capers
2 tilapia filets
1 tsp. salt
1/4 tsp. coarse ground pepper
1 tbsp. lemon juice
olive oil cooking spray
- Preheat oven to 425 degrees
- Coat casserole with olive oil spray, bake tilapia filets with a pinch of salt and pepper for approximately 12 minutes
- Melt butter into 1 tbsp. olive oil in medium skillet
- Add green onions and capers, simmer over medium-low heat for approximately 8 minutes
- Toss lettuce with 1 tsp. salt and 1/4 tsp. pepper, lemon juice and 1 tbsp. olive oil
- Serve tilapia over lettuce mixture with onion and caper sauce spooned over filets
Makes 2 servings.

Although he actually licked the plate clean at the end of this meal he said the dish could've used more capers, I happen to disagree with that assessment...so this one is up to you
